Description

Parmigiano Reggiano ‘Mountain Product’ 36 months remains a rather versatile gastronomic product. Ideal as a meditation or tasting cheese, it can be cut into flakes or cubes to accompany platters of local cured meats seasoned with drops of traditional Modena IGP vinegar, or paired with certain varieties of honey, such as Lime, Chestnut or Acacia. It can also be paired with a wide range of wines, and is recommended with robust, full-bodied reds such as Montepulciano, Sangiovese di Romagna, Barbera d’Asti or Rosso di Montalcino. Nor does it disdain pairing with sparkling wines such as Lambrusco or various sparkling wines. The result is a taste that fills the palate and stimulates the taste buds in the best possible way.

How to preserve it

Parmesan cheese is correctly stored at a temperature of between 4°C and 8°C. When vacuum-packed, 36-month Parmigiano Reggiano ‘Prodotto di Montagna’ must be consumed within a short time, so as not to lose its authentic organoleptic properties. An important tip is to avoid placing it near particularly odorous sources, such as cooked food or raw materials with a strong odour. The paste of Parmesan tends to absorb odours and therefore to take on a different taste and smell from its original one. We recommend wrapping it in food film or keeping it in its original packaging, or sealed in a vacuum container. If still packaged, Parmesan can be stored in the refrigerator for more than a month.
